We all know how crazy life is. When you work a full-time job, then pick up your child(ren) from the sitter/day-care, and finally make it home, it can be difficult to find the energy to cook a good dinner for your family.



So we need to help each other out. This is a blog designed for women who are short on time to share recipes with each other--meals that are quick, easy, delicious, and sometimes even healthy. With all of our many responsibilites, it's nice to share ideas with others going through the same thing!

Beef Nacho Casserole

This is one of our favorite recipes--I make it every couple of weeks and we never get sick of it.

1 pound lean ground beef
1 1/2 cups chunky salsa
1 (10 oz) can whole kernel corn, drained
3/4 cup sour cream or Miracle Whip
1 tsp chili powder
2 cups crushed tortilla chips (I prefer using Fritos)
2 cups shredded Colby cheese

Preheat the oven to 350 degrees.  Brown the ground beef, then drain the grease. Remove from the heat, and stir the salsa, corn, mayo/sour cream and chili powder into the beef. In a two-quart casserole dish, layer the ground beef mixture, tortilla chips/Fritos and cheese twice, ending with cheese on top.
